Method
The first thing you will do is divide all the tomatoes into quarters.
Blend them all with a hand immersion blender or food processor. Mix in the yeast before adding it to a mixing bowl.
Add the flour and mix with a spatula or your hands. Mix until you can form a ball. Place in the bowl and let rest for 15 minutes.
Cover it and leave it untouched.
After 15 minutes, take the ball of dough and knead it for a minute. Let it rest for another 30 minutes.
After half an hour, remove the dough and place it on your work area. It is always best to work on a granite counter top, stainless steel, or a large wooden cutting board.
Sprinkle flour on your work surface and use a rolling pin to roll out your dough. Roll it out into a very thin rectangle.
Chop the spring onions and mix them with the cream cheese. Divide this cream cheese + spring onion mixture over the tomato dough. Make sure the mixture is evenly distributed throughout.
